Can my ex employer sue for slander?

yes you can... and if it has effected her business you probably will. you have to try find legal foundation for reporting something illegal, if you're in the uk will probably be easy, thus your defence can be on a whistleblower basis, or exposure if it is true. before filing suit she would probably rid of all proof , which bring you back to finding and reporting any abuse prior to her taking action.
